Versatile 90-Second Low-Carb Almond Bread
I am seriously obsessed with this low-carb almond bread, y’all. I searched high and low (ok, maybe just on Pinterest) and found this beauty.
I’m still doing Keto (and hope to stay on board as long as possible) so I definitely miss my sandwiches and biscuits. I had tried several almond bread recipes before, where you bake them, but this one right here is a game changer! Not only can you make sandwiches, you can use it for eggs Benedict, or as a biscuit!! AND–it cooks in the microwave in 90-fricken-seconds! I decided to add this to my recipes since I’ve been handing it out like hotcakes since I posted it on Instagram!
You’ll Need:
A mug, fork, extra bowl
1.5 tbsp. butter
3 tbsp. almond flour
1/2 tsp. baking powder
1 half-twist of sea salt from a grinder (optional, original recipe didn’t have it but I like salty bread)
1 egg
Microwave
Directions:
Melt your butter for about 20-30 seconds in a wide mug in the microwave. Then, mix in your 3 tbsp. of almond flour and your 1/2 tsp. of baking powder.
Whisk up the egg in a separate bowl and mix it into your butter & dry ingredients in your mug until very well-blended and most big clumps disappear.
Microwave the mug mix for 90 seconds and take your mug out of the microwave carefully when done. The “bread” should have already separated a bit from the sides of the mug, but if it’s still attached in some areas, take a butter knife and carefully separate the bread from the mug.
Usually, just flipping it onto a plate makes it pop out just fine.

Then comes the hard part: deciding how you want to devour your bread!!




The best part: this recipe should be about 5 carbs (I double-checked! It’s actually less than 3 carbs for the biscuit! It’s 5 carbs with the Snickers SF jam and Laura Scudder’s peanut butter!)! (1 “normal” flour biscuit has about 25-40!!)

I use a very similar recipe that uses some flax seed and coconut flour. I love it because you can add cocoa and sweetener and suddenly you have chocolate cake, you can add blueberries below and a little sweetener and suddenly you have a cobbler… Strawberry shortcake… Put it on top of chicken stew and you have chicken and biscuits, but mostly I love to have a burger on a bun. It has saved me many times!
Can we get the entire recipe from you? I like to try different versions to see what I like best.
How much cocoa and sweetener did you add? I’d like to try that. I love this recipe and how versatile it is.
Oh, I forgot to say that I use a Pyrex custard cup vs. a mug. The size is perfect for a burger.

I don’t know how that could possibly work but it just did and it was delicious as as bacon and egg biscuit! Whipped it up in no time before having to get ready for work. It’s going to be a good day thanks to a great breakfast ? Yum!

Thanks! I think you may have started a habit. LOL! I will be trying the eggs benedict as you suggested. I just made another bacon and egg biscuit for lunch today. Since I had the time, I baked it in the regular oven out of curiosity. OMG! Now I want to try multiplying the recipe to make a full batch. However, it’s probably best that I stick to your original recipe, in the microwave and benefit from the built-in portion control. I don’t want to binge on these things and throw off my health goals.

I don’t use nor have a microwave. How did you do it in the oven?
Hi Rebecca. I actually doubled the recipe to make heating the oven worth the effort. I took the exact same batter and poured it into two small ramekins (Pyrex) and baked on 350 degrees Fahrenheit for about 20 minutes. I found that the batter was not fully baked at 15 minutes. Hope that helps.
Any idea of calorie count?
I just added it up 391 calories in the recipe, which sounds like it only makes one.
Yes, it’s only 1 serving. I put it into MyFitnessPal and it added up to 313 calories.
I added everything manually, therefore the calories for just the products listed it is possible that the generic calories are different than your products i.e. maybe you used light butter which is 50 calories per tbsp vs 103 calories in regular butter. That could result in our differences.
Actually, you’re totally right, I completely forgot to add the butter to the calculation! It would be about 400 calories. I use Kerrygold butter.

Hi Sara! I’ve made some in the oven before in little round Pyrex dishes. I believe I did 10-15 minutes (checking often) at 350 degrees.
Yes it will I’ve made them in the oven before as “Cheddar Bay” biscuits. Preheat your oven to 350 and bake in a 4″-5″ mini baking dish (about 1.5″ tall) for about 15-18 minutes, watching closely since oven times vary :).

These are seriously good, but I have to confess that I have been using 2 T of almond flour instead of 3 T. I did it by accident from simply misreading the recipe, but I am satisfied with my mistake and the lower carb count.

Hi Yajaira, since this is a single serving size does it smell eggy? I have made pancakes for one person with one egg added and they always seem to smell and taste eggy. Or can I substitute something else? Thanks.
Hi Nikki! These do have a slight eggy scent, but to me, it’s honestly so good I don’t even taste it! What I’ve recommended is to toast them in a toaster for a few seconds or give them a quick sear on each side on a non-stick pan. Taste even better!

I love toast with my eggs in the morning so I decided to try this. It was so delicious! I cut it and half and put a little butter and then put my eggs on top. Exactly what I was missing! Also my two year old had some and he loved it!

Finally tried this tonight, with peanut butter and no sugar added jam. So good! I love the fact that I can make just one and not worry about having to save leftovers, as I live alone.

I used four TBS of almond flower and two TBS of butter and I added a 1/2 tsp of stevia and a quarter cup of shredded cheddar. Makes a great bun to go with sausage.

Make this but sub in flaxseeds for one of the tbsp of almond flour…ups the fibre a little and gives a less eggy overall taste in my opinion!

This is amazing!!!! I had a very long day and after work I was starving when I got home and I said I’m not going to blow it I’m going to stick to my guns and I made myself some eggs and I said I need to find a keto bread that will make me happy! I tried this it was like the whole height of my mug!so I sliced it up into five little round slices and put a half a teaspoon (or less) of Polaner all fruit strawberry jam in the center of each slice and it was like having strawberry shortcake for dessert! Thank you for sharing this!!! I will definitely be using this recipe a lot. 20 lbs lost and I don’t plan on finding them ever again! ?
