Versatile 90-Second Low-Carb Almond Bread


I am seriously obsessed with this low-carb almond bread, y’all. I searched high and low (ok, maybe just on Pinterest) and found this beauty. 

I’m still doing Keto (and hope to stay on board as long as possible) so I definitely miss my sandwiches and biscuits. I had tried several almond bread recipes before, where you bake them, but this one right here is a game changer! Not only can you make sandwiches, you can use it for eggs Benedict, or as a biscuit!! AND–it cooks in the microwave in 90-fricken-seconds! I decided to add this to my recipes since I’ve been handing it out like hotcakes since I posted it on Instagram!

You’ll Need:
A mug, fork, extra bowl
1.5 tbsp. butter
3 tbsp. almond flour
1/2 tsp. baking powder
1 half-twist of sea salt from a grinder (optional, original recipe didn’t have it but I like salty bread)
1 egg
Microwave

Directions:
Melt your butter for about 20-30 seconds in a wide mug in the microwave. Then, mix in your 3 tbsp. of almond flour and your 1/2 tsp. of baking powder.

Whisk up the egg in a separate bowl and mix it into your butter & dry ingredients in your mug until very well-blended and most big clumps disappear. 

Microwave the mug mix for 90 seconds and take your mug out of the microwave carefully when done. The “bread” should have already separated a bit from the sides of the mug, but if it’s still attached in some areas, take a butter knife and carefully separate the bread from the mug.

Usually, just flipping it onto a plate makes it pop out just fine.

Then comes the hard part: deciding how you want to devour your bread!!

The best part: this recipe should be about 5 carbs (I double-checked! It’s actually less than 3 carbs for the biscuit! It’s 5 carbs with the Snickers SF jam and Laura Scudder’s peanut butter!)! (1 “normal” flour biscuit has about 25-40!!)

My First Born Has Graduated!!

It’s hard to believe the day has come: my 17 year-old, my Guinea Pig, my first born has graduated high school!!

I still remember holding him in my arms as a tiny baby, in disbelief that I grew this little butterball of a human in my belly, and thinking, “I’ll be 35 when he graduates, 36 when he’s 18! That’s still so young!” And it seemed like it would be eons till that time would come–but really, it went by in the blink of an eye 😥 .

He’s accomplishing so much, which makes me even more proud because I know how his social anxiety and just his anxiety in general can immensely overwhelm him sometimes.

He got his permit to drive:

And I’ve taken him driving a few times. We’ve realized that Anxiety+Anxiety=OMGWTFBBQ!!!

Case in point:

It’s crazy how nervous I get, seeing as how I not only taught myself how to drive, but John, too! But I need to suck it up and make time to take him more often. Maybe drink some calming tea beforehand 😆 !

He took his tests for college and passed them all! Was even exempt from a couple due to doing so well. He was in a group photo with other seniors my workplace had awarded scholarships to. He looked nervous, and awkward, but he didn’t complain about going. And once he overcame that obstacle, he was on to graduation.

The girls sat with their dad, since they were at his house and they were expecting a large party, but Jaylen came over to sit with Jorge and I.

Mom sat away from us because she wasn’t about to hassle with stairs LOL.

I was ready, I had both my phone and camera out so I could catch Eenan walking in….And then Jorge says, “Isn’t that Eenan??” And I totally missed it and caught his back only. Durrr.

And then they called his name and I got all teary 😥 . But I held it together!

And then they were done and it was total CHAOS trying to find your kid. It was like ants trying to find their way after someone disrupts their neat little line; just crazy. It didn’t help that another graduation was happening THAT MINUTE and people were trying to get in, while others were trying to get out. We were on the phone with Eenan, driving him crazy, no doubt; Mary, Mario, me. Then Mary and Jaylen went to find him, Jorge’s anxiety was through the roof due to people rubbing up on him so he went to the car, Mario was waiting near his car and poor Mom was tired AF since we had to walk all around the darn parking lot. Finally, we found him, and finally it was time for photos with the graduate!

As I mentioned on social media: no matter what, in spite of everything, I’m glad we can all come together to celebrate the kids’ accomplishments,  no matter how big or small. That’s what’s important!

He overcame another anxiety-inducing moment by attending a luncheon honoring him and the other scholarship recipients. He did well, even when he had to stand up, introduce himself and state his university and major.

So proud of my guy and all he’s accompmished! Can’t wait to see what he does next. And we’ll be there every step of the way!

Mother’s Day 2017

We had a pretty low-key Mother’s Day. It wasn’t our weekend with the kids 🙁 , which sucks, since we’ve had them pretty much every Mother’s Day so far 🙁 .

Jorge and I started our weekend on Friday with a quick jog at the park. We talked about dehydrators during the day and decided “why not?” and took our sweaty selves to Walmart on the way home to purchase a pretty well reviewed and cheap dehydrator. We made some badass beef jerky!

Jorge took the next day off since he had a bad cold, but he took me to breakfast at a restaurant buffet, Los 4 Compadres, he’d been going to. Although they had a beautiful spread of fruit, but since I was just starting Ketp again, I opted for the fattier things to coincide with the diet.

To be honest, the bacon was too fried and tasted weird :(. Anyway, we got home and John gave us a surprise visit! Hadn’t seen my bro since…I can’t even remember! He came bearing gifts for Mom and me, including some cashola for my birthday and Mother’s Day, and some for Mom for Mother’s Day as well, which was a great surprise!

Then he treated us to Mooyah Burgers. I had the Ice Burger, of course.

We chit-chatted and caught up on tons of stuff. It was great hanging out with him. Felt like the old days when we’d go everywhere together and eat Kumori on the way, heh. 🙁

On the way to visit Gramma, I stopped by 5 Below and got a few work out thingies (an ab wheel and 2nd yoga mat), including some cute shorts.

We visited Gramma, then picked up Jorge at home. Mario was nice enough to share the kiddos with me on Saturday evening to celebrate Mother’s Day. My poor Emmos had gotten a cold that had creeped up on her pretty fast, and Mary took her to the night clinic with a fever 🙁 . Mary did us the favor of dropping the kids off at Cracker Barrel after the appointment, where we would be having our early Mother’s Day dinner. There, I gave Eenan his invitation to a luncheon for a scholarship he is receiving from my workplace’s education program 😀 ! To say I’m grateful is an understatement!

I knew it would be a little tough to figure out a Keto-friendly entree at Cracker Barrel, but I think I did alright.

And then the hubs ordered me one of my favorite desserts there…the Coca-Cola Cake with vanilla ice cream 😯 . My brain told me, “Eat only 1 spoonful,” but I got about 3 spoonfuls instead 😳 and shared the rest with the kiddos. Old Me would have eaten the entire thing (and boy, how I wanted to!).

The kiddos looked around in the shop after we ate and then we got home and relaxed, watching “Stitch Has a Glitch” and playing checkers <3. And Jorge and the kiddos gave me my gifts! 

Such a great night, indeed.

Jorge woke up feeling even worse the next day, and though he usually goes all out on Mother’s Day morning, I couldn’t hold it against him since he felt so miserable. So Mom, Emily and I headed to the market to pick up some barbacoa and menudo–both of which pair very well with our diet!

I dropped the kiddos off a few hours after we had breakfast with their dad 🙁 . Love those babies of mine!

We got a few gifts for Gramma on the way, including some pants (her pants always go missing 😡 !), flowers and balloons and stopped to visit her for a while. All-in-all, it was a great Mother’s Day, even though we didn’t have all the kids all together 😕 . Very blessed that my Gramma is doing so much better!
